On a cold, winter’s day, there is nothing better than baking (or cooking) some comfort food. Today, my husband and I made one of our favorites: apple cinnamon muffins!
These muffins are great as a breakfast side, snack, or dessert! They are also a great treat to bring to family parties. Here’s our recipe:
Ingredients
1-2 apples, diced
1 egg
3/4 cup of milk
1/2 cup of cooking oil
2 cups flour
1/3 cup of sugar
3 teaspoons of baking powder
1 teaspoon salt
For topping
2 tablespoons sugar
2 tablespoons brown sugar
2 teaspoons cinnamon
1/2 cup walnuts, chopped if desired
Directions
Set oven to 400 degrees.
Beat one egg in mixing bowl. Combine milk and cooking oil and stir together.
Add flour, sugar, baking powder, and salt, mix until dry ingredients dissolve. (We mixed until the dry ingredients was almost blended and then added the apples).
For topping, mix sugar, brown sugar, walnuts, and cinnamon together. Sprinkle topping on batter in muffin pan.
Cook for 15-18 minutes. You’ll know it’s done after the toothpick test!
*Please note: For a healthier option, the flour can either be replaced with two cups of whole wheat flour or a cup of white flour and a cup of whole wheat flour.
This was also our first time using a silicone muffin pan, and we are extremely happy with the results! Thank you to my sister-in-law for the Christmas gift!
